• Veggie Garden Salad

    3/4 Cup cooked rice (I cooked mine in chicken broth leftovers from the instapot)

    1 yellow squash cut into small squares

    1 large cucumber cut into small squares

    2 cups cherry tomatoes halved

    2 scallions thinly sliced

    Handful of: mint, basil, parsley, cilantro all sliced thinly.

    Dressing: 3 garlic cloves minced, 1/2 lemon juiced, 2Tbl olive oil, 1 Tbl red wine vinegar.

    Spices: salt, pepper, smoked paprika, cumin.

    Mix it all together and eat it with some protein!! (I’m having mine with my instapot chicken thighs!)

  • Simple Chicken Salad

    1 BBQ chicken thigh cut into chunks

    1/2 cucumber sliced into 1/4s

    Large spoonful of full fat plain yogurt (or sub with decent Mayo)

    1 Tbl lime juice

    Sprinkle of dill, garlic powder, salt, pepper.

  • Zuchinni Potato Fritters

    2 large zucchini’s grated

    2 yellow potatoes grated

    Place in a colander and sprinkle with salt and let sit and drain for 20 minutes. Then place in a towel and wring as much liquid out as possible.

    Mix together with:

    2 eggs + 4 thinly sliced green onions

    Large handful of chopped parsley

    1/2 cup almond flour, 1tsp red pepper flakes, 1 tsp smoked paprika, 1 tsp garlic powder, 1 tsp cumin, salt and pepper

    Heat skillet with fat of choice (I used a mix of bacon fat and ghee or I recommend beef tallow, duck fat or coconut oil). Drop spoonfuls and shape them into pancakes. 4-5 minutes until browned then carefully flip. Can flip a few times to be sure it is cooked and golden on both sides.

  • Homeade Mayo + Deviled Eggs

    2 egg yolks, add pinch of salt

    Using immersion blender or whisk, blend together well.

    Add Tsp Dijon Mustard, minced garlic clove, 1-2 Tbl Lemon Juice

    Blend together.

    Slowly add a mixture of olive and avocado oil. (If you use other oils, use mild tasting ones. They will be strong if only use the single. Avoid canola, grapeseed, palm)

    You will most likely use 1/4-1/2 cup oil. Be sure it is blending and not separating. Stop adding oil when you reach the thickness you desire.

    Add sriracha, more garlic or lemon for the flavor you want.

    Deviled eggs:

    Boil eggs, let cool. Peel and slice in half lengthwise.

    Scoop out yolks

    Mash yolks and add mayo. Mix and add salt, pepper or other spices you desire. Stuff the whites with the yolk mixture and sprinkle with paprika. I added jalapeño olive slice to mine!
