Zuchinni Fritter Egg Muffins
I made about 20 of them with this recipe. You can sub other veggies, different meat, add other spices or herbs to personalize it!
Grate 2 zucchini, 1 onion, 2-3 medium potatoes.
Put them in a colander salt them, let them sit for 20 mins then squeeze out as much juice as possible. Mix the shredded veggies with 1/2 cup almond flour, 2 eggs, salt, pepper, paprika, garlic powder.
Melt butter to brush in muffin tin, then make a crust with a spoonful of the mix. Cook until slightly browned (15-20mins at 375).
Brown a pound ground beef with salt and pepper. Add as much meat to cooked crusts as will hold.
Mix 8 eggs together and add eggs to top off muffins.
Re-bake for 10-15 more mins.

Banana Egg Pancakes
Makes 1 large pancake or several small single serving.
Mash 1 banana
Mix in 2 eggs
Add 1 tsp vanilla extract and a sprinkle of cinnamon or pumpkin pie spice.
Add-ins: nuts, seeds, pumpkin purée, oats, etc.
Heat a skillet with coconut oil. Wait until hot then add batter.
Turn down heat to medium and cook until the bottom is browned and you can flip it, they are delicate so be patient.
Cook until firmed up and golden brown.
Top with PB/AB, syrup, compote, berries, nuts

Summer Breakfast Hash
2 Medium red potatoes cut into medium cubes
1 Medium zucchini cut into medium cubes
Handful of kale (or any other green or veggie) sliced thinly
2 Peppers seeds removed diced finely
1/2 cup ground beef (I had some already cooked so used that)
1-2 garlic cloves diced
Sautee potatoes in fat of choice until browned then add the rest of the veggies and cook until soft. Add cooked meat toward the end and any spices you want.While the veggies are cooking, cook up some bacon if you wish.
Top your hash with: Bacon 1-2 Eggs cooked how you like. Diced fresh tomato. Sliced 1/2 avocado.

Breakfast Sausage Patty
1 pound ground beef
1 pound ground pork
Mix a tsp or more the following spices together with the meat thoroughly:
Garlic Powder, Onion Powder, Cumin, Smoked Paprika, Dried or fresh parsley, Red pepper flakes, Fennel seeds, Salt & ground black pepper
Heat up a cast iron skillet and add a tbl fat of choice (I use tallow, ghee or bacon fat)
Grab a small handful of meat and roll it in a ball, then pat it in an oval.Cook until browned then flip over and cook through.
Let drain on a paper towel and serve hot.

Egg Casserole
Cook 1/2 pound bacon. Remove bacon and use some of the fat to cook a pound of ground beef.
Add 1 diced onion and cook through.
Add the following veggies: 10 mushrooms sliced, handful of collards or greens sliced, 1-2 garlic cloves diced. Cook until all soft.
Whisk 20 eggs. Add salt, pepper, red pepper flakes and any other spices you like. Can also add milk if you want.
Slice the bacon up and add the mix into a 9x13 dish then pour the eggs over.
Bake at 375 for 25-30 minutes until the eggs are no longer runny in the middle.

Smoked Salmon Scramble
Start with a handful of Arugula sprinkled with evoo, lemon juice with a pinch of salt.
Scramble together
2 pastured eggs
2-3oz smoked salmon (or canned or cooked)
1 Tbl spicy pesto (basil leaves, evoo, garlic cloves, pine nuts, parmesan cheese, red pepper flakes- blended)
Top your scramble over your greens.

Leek and Roasted Red Pepper Fritatta
Preheat oven to 375
Sautee in cast iron with fat: 1 leek thinly sliced, 1-2 garlic cloves diced or crushed, 2-3 roasted red peppers diced, 1/2 cup diced or ground meat (I used leftover sirloin roast that we smoked)
Whisk 6-8+ eggs (depending on size of eggs and size of pan) with a dash of milk (optional)
Pour egg mixture over the top and add salt and pepper to taste.
Cook on the stove for a few minutes then add shredded cheese (or tomato, avocado slices) and put in the oven.
Cook for 15-25 minutes until eggs are no longer runny in the center.
